Our team enjoyed a beautiful day at Pinecrest Gardens participating in the annual taste of Pinecrest. This was the second year Smoke & Spice has participated in the event which benefits the schools of Pincrest. Our talented team designed a beautiful booth where we sold small plates of our award winning BBQ fair. Our offerings included tender and juicy smoked beef brisket (always a big hit at events), award winning pulled pork our championship St. Louis cut ribs, real deal coleslaw, and our tasty maple bacon BBQ beans. This event is a great deal of fun and we look forward to participating again next year.

Annual BBQ Dinner and Auction enjoys record breaking ticket sales.
First United Methodist Christian School enjoys the largest crowd ever for their annual BBQ Dinner and Auction. Despite the current economic conditions more than 500 people came out to support this year’s annual auction. Smoke & Spice BBQ Catering once again provided the BBQ dinner for parents, friends, students, teachers and volunteers’. I was honored to have been asked to be a part of this years auction for the sixth year and I am happy to support a great school here in homestead. Annual BBQ Dinner and Auction enjoys record breaking ticket sales. Spice believes in Mrs. Mercy Nyman, the schools principal and hope to see her lead the school for years to come.

Winston Moss Luau and Wedding Anniversary Party
Winston was an absolute delight to work with. The food was very important to him and we jumped at the chance to give him everything he was looking for and more! It was a gathering of good friends and family where people could relax and enjoy the food, conversation, and the perfect south Florida weather. The menu Had a tropical theme with favorites like Kailua pig roast, guava glazed ribs, Jerk grilled chicken, red beans and rice, real deal coal slaw. Prior to dining we butler passed an assortment of hors d’ oeuvres’ which included Thai beef skewers, conch fritters, Florida firecrackers, and cucumber cups with a roasted corn and black bean salsa. Decor was simple with a tropical feel, This was a casual, fun evening filled with family, friends, laughter, and music. Smoke & Spice was honored to be a part of this Fort Lauderdale Catered event. Holiday Charity
On Wednesday December 23rd Smoke & Spice provided a decorative Holiday Barbeque to families who have experienced some hardship this year. Miami’s Mega 94.9 created the contest 2 years ago in an attempt to brighten the holiday season to some less fortunate families. The chosen families were given Christmas gifts, passes to Santa’s Enchanted Forrest and a catered holiday dinner provided by Smoke & Spice Barbeque Catering. Mark Rogers, the president of South Florida Hospitality Group did not waste a minute thinking about whether or not he wanted to be involved. This was not an option, it was an honor and the Smoke & Spice team had a wonderful time being a part of this event and were very successful in spreading some holiday cheer to families that really needed it.

Smoke & Spice Catering of Homestead continues its domination on this season’s barbecue circuit.
Traveling to Dothan, Alabama for a June 23-24 cooking event Mark Rogers, the company’s owner and chef, walked off with the coveted “Grand Champion†prize, beating out 36 other competing professional barbecue teams.
Included in the teams competing at this first annual “Smokin’ in the Wiregrass†Tri-State BBQ Festival were some of the best the circuit has to offer. Champions in their own right who travel hundreds of miles for the love of the sport of barbecuing.
Rogers, the founder of Smoke & Spice Catering, is continuing a trend he began at the start of the year. The Dothan contest represents the competitor’s unprecedented fifth Grand Champion win of the season.
To win the top award in these type barbecue events the contestants must compete in four categories: chicken, ribs, pork and beef brisket. The cook team that accumulates the largest number of total points in these categories is awarded the top prize of Grand Champion.
While Rogers’ offers a more varied menu to Smoke & Spice customers, he says his winning ways is a result of “flavoring the foods the same way as I do for my catering business.â€
Of course having the right equipment helps too. “It was extremely hot,†Rogers said of his stay in Dothan. “Over 100 (degrees) at times. We spent most of the weekend hiding from the heat inside our refrigerated truck. We set the thermostat at 60 and just chilled out in our mobile kitchen.â€
The recent Alabama win carries with it special significance for the multi-Grand Champion winner. Rogers is now eligible to compete in a drawing that could earn him an invitation to the coveted Jack Daniel’s contest held in Lynchburg, TN each October; and the organizers of the Fort Ruckers, Alabama contest to be held in late July have waived the entry fee to encourage Rogers to compete in their Kansas City Barbecue Society sanctioned event.

MUD-B-Q or was it BBQ in Stark FL Smoke & Spice wins Best Ribs
Stark, Fla. — hosted their 20th Annual North Florida Antique Engine & BBQ Cook-off December 9-10th Mark Rogers of Smoke & Spice a local Homestead Full Service Catering firm won 1st place ribs and 3rd place chicken in a recent Florida Barbeque Association sanctioned barbeque competition.
The event was a test of endurance with a deluge of rain falling on the cook site throughout the days leading up to the cook-off. Much of the ground was completely covered in mud. With vehicles getting stuck continually and night time bringing temperatures that dipped down into the 40’s, it was all but ideal for a BBQ event. With nearly 40 Professional BBQ Teams competing in the FBA’s last sanctioned event of the year competition was tough.
Mark Rogers working on a 3†bed of hay brought in from a local feed store to keep his feet and equipment out of standing water and mud cooked what he says “are the same ribs he always cooks for his catering clients†with the exception of sauce. He always sauces his competition ribs but only sauces his clients ribs upon request preferring to leave it on the side for the customer to make the decision.
In events like this when conditions are all but ideal you really have to be on your game to do well. Wind, rain and low temperatures change the way your smoker performs. Whether you need additional fuel (wood, charcoal, etc) to maintain the temperature in your pit, maybe a blanket to cover your pit to help keep it warm at night “no joke†or just trying to keep your fuel source dry so it will burn the way you need it to, these are just some of the additional things we need to think about when the weather gets ugly.
During the awards ceremony Smoke & Spice was presented with 2 trophies and $550.00 in prize money winning 1st place ribs and 3rd place chicken.
Mark said later he was very pleased with both awards but especially please with the rib award considering the other teams we was up against which were some of the top competing teams in the country.

Smoke & Spice Catering of Homestead is becoming a force to be reckoned with on the barbecue circuit this season.
It isn’t unusual to have anywhere from 20 teams to 50 or more teams competing for cash prizes in barbecue contests held all across the country. And Florida with its signature year-round weather hosts statewide events throughout the year.
These competitions attract the best barbecuers. Many whom will often travel hundreds of miles to match their recipes and techniques with their challengers. And all contests are judged by a group of expert and highly qualified judges who are as dedicated to the sport as the cook teams are.
To win any one of these contests and to be judged Grand Champion is an achievement.
And chef Mark Rogers, the founder of Smoke & Spice Catering, was able to bring home the First Place trophy from a 26-team contest held in Viera, FL, just north of Merritt Island on April 7-8.
What makes Rogers win notable is that it was his fourth win in as many months. And to make this win remarkable is that he has thus far won every show he has competed in this year: shows held at Wauchula, Winter Haven, Jacksonville and most recently Viera.
To win four times in a given year is an accomplishment. To win the four times in as many appearances is virtually unheard of.
In order to be considered for the top award in any barbecue event the contestants must compete in four categories: chicken, ribs, pork and beef brisket. The team that accumulates the largest number of total points is declared the Grand Champion. On his way to being awarded the big prize Rogers was also awarded a 1st place trophy for his brisket entry and a 2nd place trophy for his chicken.
Chef Rogers attributes his winning ways to the same attention to detail that he applies to the preparation and flavoring of the selections offered on his catering menu.

Wauchula, FL- Hosted their 2nd annual Grillin & Chillin on Main BBQ Cook-off February 3-4th.
Wauchula, FL- Hosted their 2nd annual Grillin & Chillin on Main BBQ Cook-off February 3-4th. Mark Rogers of Smoke & Spice Catering in Homestead, won Grand Champion. Winning 1st Place Ribs and 1st Place Brisket. As they did last year the organizers of the contest put on a fantastic event despite the weather.
Wauchula, a small town about 30 miles west of Sebring closed its downtown streets Friday morning to traffic and setup 29 cook teams on the street for the contest along with some other local vendors and a temporary farmers market. The contest got under way Friday in heavy rains and tornado warnings. The rain continued Saturday morning and finally letup around 1pm..
By mid afternoon on Saturday the sun was out and so was the community, listening to live music and eating BBQ. Once again not only was the competition tough but so were the conditions. Rain, wind and constant power failures made for an interesting Friday evening. At the awards ceremony Saturday afternoon, Mark was really excited to find out he had won 1st place ribs and 1st place brisket, but when they called Smoke & Spice as the grand champion of the contest he jumped from his seat with excitement and ran up to accept his trophy and prize money. The caterer came home with three trophy’s and $2300.00 in prize money.
